Looking for a last-minute midweek meal…and you’re on a budget? Try this, of so easy, Instant Pot Risotto! If you follow my blog here – and read my menu plans – you know that we eat it once a week: the variations are endless! Here’s what I used: onion, garlic, Arborio rice, a good glug of wine, water, stock cubes, fresh parsley, freshly grated parmesan cheese, salt and pepper, a squeeze of lemon juice. Optional: cooked chicken, crispy bacon, shrimp, mushrooms, spinach, peas, butternut squash, asparagus, rucola/arugula, leek, shallots, brussels sprouts, pine nuts… Wash your hands, get your pinny on and let’s go!
