Saturday highjinks and shopping my house

Saturday mornings are spent in my happy place, by the sea (and IN the sea) with this fabulous group of ladies… The Copenhagen Bluetits Chill Swimmers!

Yesterday there were ominous black clouds above…

But we chased them away with our good vibes and then the sun came out…here we are, basking in it!

We have quite a few four-legged members too…

After our dip/swim (everyone does their own thing), we stand around and natter. There’s always a great array of food and drink to share. (These past three weeks we’ve celebrated three birthdays!)

Anyway, my contribution to the buffet this week was Coconut Tops. In my schnazzy Bluetits cake tin.

Did you work along with us on “Shopping Your House”?

Well, a can of condensed milk and two packets of cosndensed milk were my items from the pantry declutter… (It was funny that quite a few of you discovered cans of chickpeas and were going to make hummous!)

So I made a batch of Coconut Tops! Super easy to make (just two ingredients, condensed milk and coconut) and super quick to bake.

The ladies loved them. And the gluten-free ladies could eat them too, woo hoo!

Enjoy your day, keep decluttering and, most important of all, surround yourself with good people!

See you tomorrow for another 15-minute productivity mix where we’ll be doing Three Tiny Tasks to make our homes feel a little better. And, like last time, I will be giving you a quick self-care mission!

Hugs

Hi Margaret! Mix equal weights of condensed milk and coconut (eg, 398g tin of milk, 398g coconut). Spoon small blobs on to a baking sheet with baking paper (398g tin gives approx 20 Tops). Bake in fan oven at 175c for about 15 minutes. Watch them carefully because they can go from golden to very dark quite fast because of the high sugar content. Enjoy!

Dear Diane, thank you for the update. This looks very nice. We are having a lot of fun, too. Plus work, plus meeting friends…. I just came home from a day trip. Home sweet home, thanks to the 15mins I spent every day, it is all nice and cozy. We decluttered some clothes from my youngest daughters wardrobe and I went to a friend that can use them and hung the bag at her door. Yay!

Would love the measurements and recipe for the coconut tops! Will be arriving in Copenhagen on the 16th of Sept. Husaband is running in the Copenhagen Half. Can’t wait!

You ladies always look like you are having so much fun. Love the photos!
Thanks Diane 🩷

Hi dear Diane, your coconut tops are looking like our austrian kokosbusserl🥰 (Its a christmas baking) I love the coconut flavour. You did a great Job with the dark clouds👍

My family is camping this week. We menu planned and decluttered some shelf stable items from the pantry for our camping trip! (Mostly me eating granola bars that the rest of the family doesn’t like) 🤣🏕️
