It’s been a strange kind of week. First DD8 fell ill (scarlet fever), then DS11 too (jealousy of DD8 being off school plus a slight cold and a bad cough). DH is yo-yo-ing back and forth to European capitals. And then add in a quick jaunt for all of us to the mainland of Denmark for a family party. [Did you know that Copenhagen, where we live, is on an island? Ha, now you’ve learned something!] So the menu I originally planned has been chopped and changed a lot. But – hey – I always have a fully stocked pantry, so it’s been plain sailing π
* Breaded plaice fillets (straight from the freezer), basmati rice made in my beloved ricecooker and tomato/chive salad
* Hamburgers on wholemeal rolls with veggie sticks on the side. The kids are making hot squidgy chocolate cakes for dessert, icecream or cream on the side π
* Suppe (Danish meatball and dumpling soup) with hot ryebread rolls
* Crustless quiche with cheddar cheese and bacon filling, plus pickled beetroot and a green salad
* Family party – hooray, restaurant food! ;D
* Taco shells (filled with spicy minced beef) with guacamole, salsa, cucumber etc
* Homemade vegetarian pizza, using up what veggies we have left in the fridge (I made up a large batch of dough in my breadmachine last week, and stashed a bag in the freezer, go me!)
