You have inspired me to assemble a notebook of quick meals for busy days—dishes that can go from “what’s for dinner?” to “let’s eat!” in about 30 minutes. Some of these dishes have convenient pantry ingredients; others are just easy to assemble and serve. Now I can compile my shopping list from these recipes when I plan upcoming hectic or over-scheduled weeks. Cheers!
