When it's hot in Denmark, reach for the 'cold bowl'!

Three weeks ago we had hail stones and sleet, and hard frost during the night. Last weekend that all changed and yesterday afternoon (a bog standard Tuesday) our local beach was packed and the temperature was 20c/68f. Welcome to Denmark! (Though, of course, the water is still cold – 11c/52f – so me and my fellow Winter Bathing Belles were the only ones who were actually swimming in the sea…)

The warm weather brings Danes on to the beach, bikepaths and sidewalk cafés. And gives them a craving for that first ‘taste’ of summer – koldskål. Which means that the sales of koldskål rocket. Which in turn means that [gasp] when I tried to buy some this morning at the supermarket, the fridge section was completely wiped out! So it’s either make your own (homemade koldskål recipe is here) or make do with the (vastly inferior) longlife stuff. Boo hoo! 😉

So what on earth is it? The Danes have been eating koldskål for over a hundred years. Personally, I love the name. Kold = Cold. Skål = Bowl. Koldskål = Cold bowl! It’s traditionally made with buttermilk, raw eggs, sugar, vanilla and lemon. Today you buy it readymade from the supermarket. And the Danes buy lots of it. Millions and millions of liters of it during the summer months. When the temperatures start to rise, so do the sales of koldskål… As I found out this morning at the supermarket, there is often a problem keeping up with demand.

And what does it taste like? Hmm, even though I’m a ‘Dairy Queen’ (pass the cream, please, and yes, I’ll have a little bread with my butter), koldskål is definitely an acquired taste. A weird mixture of sweet and sour. But a very ‘fresh’ taste. It looks like thin yoghurt and you normally serve it in a bowl and throw a handful of little crispy biscuits called kammerjunkere (available from the supermarket or bakers) over the top. Or a few sliced strawberries.

You can eat it for lunch or dinner. Or as a mid-morning or afternoon snack. Or drop the kammerjunkere competely and just drink it straight out of a glass. Some people even eat it for breakfast. In our house we usually eat it after dinner, for dessert. My daughter aged 14 is addicted to it – so I had better find a new pusher soon!

Necessity is the mother of invention. And of homemade koldskål.

As the Danes say, “Nød lærer nøgen kvinde at spinde”.  Necessity teaches the naked woman to spin.  And that’s exactly what I ended up doing on Wednesday.

Okay, so I wasn’t exactly sitting in my birthday suit, in the front parlour, at the wheel spinning a yarn.  No, I was forced to make koldskål from scratch.  To give you some background:  Tuesday was one of the hottest days of the year.  So when I opened the door of the dairy refrigerator at our local IRMA supermarket, the proverbial cupboard was bare.  What, no koldskål?!  Not even one measly carton of the addictive white stuff?  “Sorry,” said the friendly IRMA man, “just can’t keep up with demand.”  You will remember, dear readers, from my very first post about koldskål in 2011 that those crazy Danes are C.R.A.Z.Y. about the stuff.  Yep, there is a direct correlation between high temperatures and sales of koldskål.  Were we heading for koldskål shortages?  As we stood there chatting about the weather, guess what I spied behind him?  That dreaded (Danish) root of all evil –  lakrids (liquorice)– strikes again.  I mean, for heavens sake, liquorice salt?!  Blech and double blech! 😛

But, as usual, I digress!  I remembered something about making it yourself and – lo and behold – when I started checking out the different cartons of kærnemælk (buttermilk), there was a recipe on the back.  Saved!

The recipe was: “Beat 2 pasteurised egg yolks, 2 tablespoons of brown sugar and the seeds from a vanilla pod (we used vanilla powder) until frothy.  Carefully stir in the buttermilk.  Add a couple of tablespoons of lemon juice if desired.  Serve with cornflakes, kammerjunker (little plain biscuits) or slices of fresh strawberry.”

So that’s what we did.  And – by jingo – it tastes just as good as the readymade stuff! And it’s – selvfølgelig – dang cheaper than the readymade stuff… [said the canny Scot] So we ate half of it, there and then, and poured the remains back in the kærnemælk carton, to keep it cool in the fridge for another time.

Fast forward to today, Friday.  DD12 and her friend have just biked home from school and have polished off the remains.  Hmm, time to get naked and start spinning! 😉

Forårskriller – Spring Tickles – Koldskål!

Not only has the sun finally made more than a fleeting appearance in Denmark
this week – but it seems as though the grumpy old evening frost has gone for
good and that temperatures are slowly but surely crawling their way up, woo hoo!
:)

Which, as usual, basically mean winter coats and gloves in the morning on the
way to school. [Umm, or actually not on the way to school – because our
kids’ teachers are still locked out from schoolfor the third week running = no
lessons!] Try again…winter coats, boots and gloves in the morning on the way to
work. Then take them all off in the afternoon and grab an icecream on the way
home.

But if you want something that is quintessentially Danish to soothe those
forårskriller – ‘spring tickles’ – then what better than a bowl of
koldskål? Don’t know what that is? Here’s my post about it from
last April, when the temperatures were even higher… Velbekomme!

A taste of Danish summer

The Danish weather gods are on a roll! For the past week we’ve had sun, blue
skies and temperatures of around 20 degrees celcius. Shorts and sandals (and
bare legs – eek!) have been brought out of hiding. We’ve been eating lunch and
dinner in the garden. And fighting over the seats in the shade. Out on the
street you can’t move for bikes, skateboards, scooters and rollerblades. And
the best part? According to the Danish Meteorological
Institute
, it looks like the fabulous weather is going to continue. At
least for another 3 or 4 days, yay! :)

And with our first taste of summer weather comes…our first ‘taste’ of summer

My kids aged 9 and 11 are addicted to it – we’re already on our second carton

I’m back after a fabulous two week long Easter break (both in New York in Copenhagen) and ready to get behind my blog desk! 😀
