What’s for dinner tonight? Menu plan, 11 November 2023

Menu planning!

Happy Saturday from started-off-sunny-but-clouds-and-dark-skies are coming Copenhagen! Flylady habit of the month is meal planning so here goes with this week’s menu! On Thursday my friends Angela, Erika and I had a seaswim/sauna evening at our club and we brought along a picnic dinner to share – very hyggelig! I made Spiced Carrot and Ginger Soup (see below for the recipe). Angela brought bread rolls, butter and cheese. And Erika brought Lindt chocolates and grapes. What a lovely, relaxing evening we had! The best way to combat the doom and gloom of the long Danish winter darkness…

But without further ado, here’s the full run down of what we ate at Casa Copenhagen this week!

Leftover homemade steak pie (from last week) served with pickled beetroot and a salad

Slow Cooker Honey Garlic Chicken Noodles – I got the recipe idea from the young Irishman, known on social media as “Bored at Lunch”. This particular recipe wasn’t fantastic so I won’t make it again.

Spiced carrot and ginger soup – for our picnic dinner, see above! I don’t have an exact recipe for this soup, I change it every time I make it! But here goes… Fry ginger, garlic, chopped carrots and onion. Add some herbs or spices: turmeric, garam masala, curry, cumin, paprika, smoked paprika, etc. Whatever you feel like. I sometimes also add a small cup of red lentils, for a more substantial soup. Pour in a tin of coconut milk (I use full fat variety) plus some vegetable or chicken stock, to cover. Cook until soft – I usually pressure cook soups in my Instant Pot. Leave to cool slightly then blend. Add some sriracha sauce or chili flakes to give it a slight kick. Not too much, you just want warmth. I love to top it with fresh coriander and a squeeze of lime juice. Delicious and so comforting on a chilly, dark day. Or after a cold evening seaswim!

Birthday Bash! Out to a German friend’s 50th birthday, woo hoo! Pot luck dinner so I baked some chocolate brownies.

Confit de canard – duck confit with baby potatoes, padrón peppers and pickled red cabbage. Then chocolate icecream bonbons for dessert. Our kids came round for dinner last night to celebrate Mortens Aften (St Martin’s Eve), 10 November. It feels like a mini run through for Christmas because in Denmark we eat duck for Christmas dinner! I added some sparklers to our icecream dessert…just because, ha ha!

Brændende Kærlighed – a traditional Danish dish called “Burning Love”, good old-fashion, honest, comfort food. Not for the faint-hearted! Mashed potato topped with fried onions and tons of bacon… One of hubbie’s favourites. You can see how I make it below, just tap to watch the video!

That’s it for this week’s menu plan – hope it gave you a little inspiration! I make a basic list for the week then decide on the day what to make (depending on our plans) . Once a week is leftovers or “clean out the fridge” quiche. On busy days we have”madder” (Danish rye bread with various toppings). We also plan the occasional takeaway or dinner out. Keep it simple, Sweetie! Okay, now it’s your turn!

Friday is the day we ..?! A murphy bed in Brussels plus Flyady hygge Christmas planning mission 20!

Coming up in today’s Newsletter! Hygge Christmas Flylady planning mission number 20 and our goals for Friday! Hope you’re enjoying some nice weather today? Vibeke and I had our skinnydip seaswim this morning in the wind and rain…hair-raising fun! LOL! Sea temp today was 10c/50f and the air was 8c/46f

Friday is here and it’s time to wrap up the week and prepare for the weekend ahead. We all need to rest and recharge – whatever that looks like for you and your family! Today’s focus is to spend a few minutes decluttering your handbag and car. Set a timer for 5 minutes and see how much clutter you can find! I’m removing shopping receipts, extra lipsticks (how do I always end up with so many in one handbag?!) and snotty hankies.

It’s also Date Night – be deliberate and take time to nurture your relationships! Hubby and I like to stay home on Fridays and tonight our kids are coming round for a special dinner (it’s Mortens Aften tonight = St Martin’s Eve). The tradition here is to eat duck!

Oh, and who needs a laugh today? Here’s today’s hygge Christmas planning mission – number 20! It was fun for me to rewatch this video…I was on a trip to Brussels, Belgium, to visit good friends/colleagues (from my days working at the European Supreme Court in Luxembourg in the 1990s) and you can see me making up the murphy bed in my Brussels hotel room! Happy Thursday from dark, wet and windy Copenhagen! Errand Day in Flylady Land but feel free to pick any day of the week that suits you/your family’s schedule. Sometimes I do my Errands at the beginning of the week, sometimes I get things when I am out and about in the city. The main thing is to have your list READY so that you don’t forget the essentials. And also you won’t get carried away buying things that are not on your list – ha ha!

Hygge Christmas planning

Last week I ran a few errands in the city with my Bestie, Erika from America – it was wonderful to be out in the crisp fresh air just before sunset (it’s getting dark by 4.30pm now). We started in the Østerbro part of the city, then walked along the lakes to Nørreport, finishing by Torvehallerne (the Copenhagen Food Halls). The outdoor flower, fruit and vegetable stalls are always a riot of colour – very hygge in the twilight!

Erika bought Liberty fabric for some handmade Christmas projects. Are you making gifts this year, crafting, baking – do you need supplies? Get them ordered or add them to your Errand List – the clock is ticking! I had some non-food items on my Errand List: “scratch off” advent calendars. They cost 50 Danish crowns and I always buy one for hubby, my DS23 (dear son, 23 years old) and DD21 (dear daughter, 21 years old). We never win much but they’re part and parcel of Christmas in Denmark.

Are you having fun? Flylady Mission 17, Hygge Christmas Prep 2023

Happy Tuesday from – again – very wet Copenhagen! It’s Plan and Play day in Flylady land (but choose any day of the week that works for you) and Day 17 of our hygge Christmas planning reflects that theme. Today we’re chatting about Thanksgiving and daily routines. Do you need a pep talk to get you up off your bahookie and moving forward? LOL! I’m your girl! Grab your pen and notebook! As you saw in today’s video, we’re not stressing, we are putting one foot in front of the other and focusing on our routines and habits. Tuesday is Plan and Play day. Look at your diary and see what’s coming up, pay bills, make any necessary appointments. Hubby and I are invited to a 50th birthday party this weekend and I’m going to look out my outfit, check the address/how to get there so there’s no last minute panic. Temperatures in Copenhagen have now fallen below 7c/44f so that means it’s time to put winter tyres on our car. I went online this morning and booked an appointment with our local garage for next week. Go me! I’ve also been online and booked my next two haircuts (one before Christmas and one in the New Year). I love that my hairdresser has online booking: makes it so easy and I can avoid making a phone call (do you hate making calls too? Ha ha!) And take a minute today to plan some fun for yourself and your family! If it’s planned, it is more likely to happen!

My friends Erika, Angela and I have arranged an evening swim/sauna in the dark at our bathing club later this week. It’s dark here before 5pm now and actually very hyggelig swiming in the dark… Can’t wait! Angela and Erika have known each other for over 18 years – they met at Baby Group!

Half-way there, how do you feel?! Flylady mission 16

Can you believe today is Mission number 16 – we’re halfway there, woo hoo! But first of all, good morning from rather grey Copenhagen! I do hope you had a wonderful weekend – what did you get up to? Relaxing with the family, working in the garden, looking after grandkids? I went to a crafts and vintage julemarket (Christmas market)…

…organized by my international ladies club, LINK Denmark. All very hygge and I bought a few handmade Christmas gifts. (Will be wrapping them later this week.) Saturday mornings are spent with my Copenhagen Bluetits Chillswimmers ladies. Temperatures are dropping so we are wearing more and more layers! But on to today’s hygge Christmas planning mission. It’s Monday so can you guess what it is?

This week’s menu plan! 5 November 2023

What’s for dinner?

Happy Sunday from very grey and wet Copenhagen! I’ve got a thick beef stew on the go in my Instant Pot today (pressure cooker setting) which will be our dinner tonight – steak pie. Yum! Not sure if it’s because I’m Scottish but I will eat anything if it’s covered in – or topped with – pastry, ha ha! Our Flylady habit for November is meal planning. What’s your style? I usually draft a basic plan and then decide on the day what we’ll be eating (our plans shift quite often). Once a week is dedicated to leftovers or a straightforward “clean out the fridge” quiche or omelette. And on really chaotic days, we turn to “madder“. Danish rye bread with an assortment of toppings (a common lunch choice here in Denmark). We also factor in an occasional takeaway or dinner in the city with our grown kids. Keep it simple, Sweetie! Without further ado, here’s what we ate at Casa Copenhagen last week!

Flylady habits of the month

Västerbottenostpaj – Swedish cheese pie A readymade pie (Västerbotten cheese is similar to parmesan) gently heated in the oven and served with a mixed salad and baby potatoes. In the summer we usually eat it warm with some smoked salmon on the side.

Vegetarian mixed bean chili (I used kidney beans, black beans, chickpeas and sweetcorn) made in my Instant Pot (slow cooker setting) with tortilla chips, sour cream, grated cheese and coriander. I made the chili with a large cup of quinoa so we didn’t need any rice on the side. And this time I also added some smoked paprika to the chili which gave it a lovely depth of flavour.

Creamy chicken pasta – leftover cooked chicken (I had a small bag of it in the freezer) which I quickly fried with onion, garlic and herbs in my Instant Pot on sauté mode. Then I put in a layer of wholemeal pasta (enough for me and hubby) and covered the mixture with chicken stock. Cooked at high pressure for 5 minutes. When the pasta was cooked I stirred in some frozen peas (they “cook” immediately in the hot pasta). And then added quite a lot of Philadelphia cheese plus a little cream. Extra parmesan on top. Forgot to take a photo but it’s always delicious and so easy! (Sometimes I use leftover ham or beef, bacon, mushrooms, red peppers, etc)

Chicken and bacon pastry parcels – straight from the freezer, on a night that I was home alone. With homemade sweet potato fries and salad.

Super Speedy Thai Prawn curry – a recipe my Dearly-Departed-Mother-in-Law often cooked for us. Has absolutely nothing to do with Thailand but it is very speedy and tasty – it can be on the table in 15 minutes, once you get the rice cooking! I keep a packet of frozen prawns in the freezer for this dish (just add the frozen prawns to the sauce once it is made, and gently heat through).

That’s it for this week’s menu plan! Remember to clear up the kitchen as soon as you finish eating dinner (don’t go wandering off) and complete your Evening Routine. Whether you are in the northern or southern hemisphere, keep your Routines hygge – they will be more enjoyable!

Your weekend goals, Halloween highjinks, Flyady Christmas planning mission 15!

Halloween has been…and gone! We had great fun at our Bluetits Chillswimmers meet on Saturday morning where we dressed up a little (coldwater seaswimming is our chance to go a little crazy EVERY weekend, ha ha!) and had some yummy treats and lots of hot tea in our thermos flasks to warm us up afterwards! It was blowing a gale on Saturday morning, sea temp was 9c/48f and the air much lower due to high winds! Brr!

And I’ve displayed a few spooky decorations in the hall and by the kitchen sink. But today is Friday 3 November – it’s over! So I’m taking down the Halloween decorations, packing them away and eating the last of the Halloween sweets. Go me! Did you or your kids carve pumpkins? What state are they in? Don’t forget about them out on your porch or front step! Take action this weekend!

A plan to simplify your week!

And talking of the weekend… A wee reminder! Just because it’s the weekend, please don’t stop your Routines. You may think “oh, I deserve a little time off”. But do you know what really happens? Saturday or Sunday slips away from us. We don’t get up and moving, we slouch around, unfocused. All those plans we had for the day don’t happen. Instead of enjoying time with friends or family, the day just drifts. And by Monday morning, the small chores are piling up and we are feeling behind. Again! LOL! So do yourself a favour. Get the things you need to get done DONE. And enjoy the rest of your weekend to the FULL!

Happy Thursday from currently sunny Copenhagen! Got a good start to the day with a cold plunge in my garden She-Shack! And I’m just back from running Errands (scroll down to see what’s on the shelves at our Danish supermarkets this week).

Here’s a look at some of the items that were on the shelves in the supermarket this morning. Pickled red cabbage in a jar is popular all year round but we eat a ton of it in the winter! Mini chocolate/marcipan “snowballs”, chocolate advent calendars, Danish butter biscuits… Of course, the Danes love to bake and make homemade chocolates/sweets in December but it’s nice to have some readymade ones on hand… My daughter loves the chocolate wreaths with sprinkles. They don’t taste that great but they are a Danish Christmas classic (and you can put a ribbon through them and tie them on the Christmas tree)! What do you need to pick up from the supermarket, ironmonger (hardware store), library, post office, etc this week? Check your lists before you head out the door so you don’t forget anything! See which non-perishables you can stock up right now (baking supplies, toilet paper, cat litter, etc) so you aren’t having to battle the stores before Christmas. The great thing about having our Christmas planning list is that we can see what we need and buy it when we see it on offer…

New Month, new Flylady habit! Plus Anti-Procrastination Day + Christmas Prep 2023, Flylady mission 13

Good morning from the-sunshine-is-back-after-a-day-of-incessant-rain Copenhagen! The most beautiful sunshine for our skinnydip seaswim this morning but boy, oh boy, we have turned a very cold and sharp autumn corner! Sea temp today was 9c/48f and the air temp has dropped quite dramatically to 5c/41f. Brrr! But it was fabulous to feel the warm rays of sunshine when we swam. There was steam coming off the water and our breath, ha ha! It’s the first of the month which means we have a new Flylady habit starting today. Plus it’s also Wednesday which means……?

Yes, you guessed it, Wednesday is Anti-Procrastination day in Flylady Land. Let’s knock a few tasks off our list! The same applies to today’s hygge Christmas planning mission – scroll down for that! Have a quick think and write down any tasks you’ve been putting off. Phoning the dentist, querying an invoice, booking tickets for the theatre? Today I’m going to book an appointment with an ophthalmologist (my optician found a couple of issues when I got my eyes tested for new glasses on Saturday morning and wants me to have further checks).

We are also working on a new habit for November! In October our focus was dealing with paper clutter and now we are moving forward with Menu Planning! (I post my menu here weekly so there will be plenty of inspiration coming…)

But back to our hygge Christmas planning mission… Time to get a few things done! I have some Christmas gift wrapping to do, plus I need to finalise an online order… A few days ago we finally booked our flights for a flying Christmas visit to see my family in Edinburgh. But now we need to book a restaurant for a festive dinner with Mum out on the town. Things are getting reserved fast so we need to act quickly. Edinburgh always looks so pretty with all its Christmas lights – I’m so looking forward to our visit!

Raindrops are falling on my head… Happy Tuesday from Copenhagen! Hygge Christmas Prep 2023, Flylady mission 12

Good morning from very wet Copenhagen where it’s going to be a very dark day – but I’m feeling fresh after my morning dip in my plunge pool! Did you remember to add a little hygge to your morning routine?

It’s Plan and Play day in Flylady land (but choose any day of the week that works for you) and Day 12 of our hygge Christmas planning reflects that theme. Today we’re chatting about food, travel and guests… But take a minute today to plan some fun for yourself and your family! If it’s planned, it is more likely to happen! My international ladies group here in Copenhagen (LINK Denmark) organises a great range of events for us all year round. Sports activities, guided tours, workshops, book clubs, etc, etc etc. Last week I took a mini wellness class in breathwork (lead by one of our LINK members who is a nurse)…

….and also went on a guided tour of UN City. So interesting to see the inside of this building which sits right on the Nordhavn harbour, one of the places I swim! Fun fact: their warehouse, UN City Campus 2, is the largest humanitarian warehouse in the world! Ideally situated – served by rail, road and sea.
