It’s Easter Monday in Denmark and we’re coming to the end of the spring break. We’ve had family visiting with us…look at Kiko, the rescue cat, who feels right at home here!
Danish Easter lunches are always a treat and two essential components are eggs and herring.
We often have the pickled herring topped with egg mayonnaise but yesterday we went with freshly boiled eggs and a dollop of mayo.
Oh, and don’t forget some påskebryg (Easter beer) to wash it all down!
Tarteletter (pastry tarts filled with a creamy sauce of chicken and carrots and peas) are another popular dish at Easter.
You can buy the filling readymade but I like to make it myself.
We’ve also eaten a lot of lamb (minced lamb and leg of lamb) this week. Dessert yesterday was marängsvis which is a Swedish favourite, similar to Eton Mess in the UK. Crushed meringues, a mix of fresh berries (we had raspberries which are my absolute favourite and strawbs) and cream (whipped or poured over). Always hits the spot!
In other news, we’ve been going for walks, reading our books and indulging in an ice cold gin & tonic before dinner. Served in our Edinburgh crystal glasses – which are still going strong from our wedding 28 years ago!
With a few tasty snacks on the side (olives, crisps, nuts, mature cheese, nuts, etc). The small Edinburgh crystal bowl was my Mum’s. I have two larger bowls (also from our wedding) which I often use for salads and desserts.
And no family break would be complete without a few rounds of Rummikub! Hubby and I used to play this together when we were first dating. We take it on every family holiday and now grown kids have their very own Rummikub sets, ha ha! Do you have a family game that travels with you?
Stores and businesses are closed again today, Easter Monday (they were closed Maundy Thursday, Good Friday and Easter Sunday) and it really feels lovely that things are sooooo quiet! But will be good to get back into my usual routines tomorrow. Until then, enjoy your day and just keep chilling, wherever you like to hang out…
